Hello and welcome to Down to Earth’s first recipe post! Our staff has lots of great Thanksgiving and Christmas recipes to share, so we’ll be posting scrumptious new Holiday entertaining menu ideas each week.
Today we start with a Thanksgiving classic – a tasty Sweet Potato Casserole recipe contributed by Stevie L.
Stevie’s Sweet Potato Casserole
2 lbs. sweet potatoes (canned or peeled, par-boiled and chunky sliced fresh)
1/4 cup margarine, melted
6 tbs light brown sugar
4-5 tbs dark rum
1/2 tsp salt
1 large can of mandarin oranges
2 tbs chopped pecans
Preheat oven to 375 degrees.
Mix potatoes with:
- 2 tbs margarine
- 4 tbs brown sugar
- all the rum
Fold in some of the mandarin oranges (leave a few to place on top)
Grease a 2 Qt. casserole dish – put the mixture in and place remaining orange wedges on top.
Mix together remaining sugar and margarine with all the pecans and sprinkle that mixture over the top of the casserole.
Bake at 375 degrees for 30-40 minutes and enjoy!
